Wake up the right way with these fabulous breakfast cookies. Whether you are looking for some morning fuel or a mid-afternoon snack, these cookies are a great way to get your energy levels up. Check out the recipe below.
Ingredients:
- 2 Bananas, mashed
- 2 Flax eggs (2 tbsp flax seeds with 5 tbsp water, rest for 5 mins)
- 2 tbsp Nuoi Foods Raspberry & White Chocolate nut butter
- 1 tsp Pure Vanilla Extract
- 3 tbsp Agave Nectar
- 1 1/2 cups Gluten Free Rolled Oats
- 1 Cup Coconut Flour
- 1 tsp Baking Powder
- Pinch Sea Salt
- Handful Raspberries
- 2 tbsp Coconut Oil
Method:
- Pre-heat the oven to 200 degrees
- Place all of the ingredients, except the raspberries, into a large bowl and stir it all up
- Add the raspberries and stir in gently
- Roll the mixture into small golf ball sized circles (or use a teaspoon)
- Place the cookie balls onto a lined baking tray
- Cook them in the oven for around 10-15 mins or until golden
