Raspberry Oat Breakfast Cookies

Wake up the right way with these fabulous breakfast cookies. Whether you are looking for some morning fuel or a mid-afternoon snack, these cookies are a great way to get your energy levels up. Check out the recipe below.


  • 2 Bananas, mashed
  • 2 Flax eggs (2 tbsp flax seeds with 5 tbsp water, rest for 5 mins)
  • 2 tbsp Nuoi Foods Raspberry & White Chocolate nut butter
  • 1 tsp Pure Vanilla Extract
  • 3 tbsp Agave Nectar
  • 1 1/2 cups Gluten Free Rolled Oats
  • 1 Cup Coconut Flour
  • 1 tsp Baking Powder
  • Pinch Sea Salt
  • Handful Raspberries
  • 2 tbsp Coconut Oil


  1. Pre-heat the oven to 200 degrees
  2. Place all of the ingredients, except the raspberries, into a large bowl and stir it all up
  3. Add the raspberries and stir in gently
  4. Roll the mixture into small golf ball sized circles (or use a teaspoon)
  5. Place the cookie balls onto a lined baking tray
  6. Cook them in the oven for around 10-15 mins or until golden
