Apple cinnamon French toast

We love French toast and spent a while experimenting to make the best vegan version, it was important to us that we kept it as healthy as possible. We found the best combination used almond milk, which is our favourite type of dairy free milk! This toast was mouthwateringly delicious, but not too overwhelmingly sweet… topped with our Nuoi Foods nut butter and cinnamon apple, it was a match made in heaven!

Ingredients:

For the French toast:

  • 2 rounds of bread (we used wholemeal seeded bread)
  • 1 cup of Almond Milk
  • 1 tsp Natural vanilla extract
  • 1 tsp Cinnamon
  • 2 tsp Agave nectar (or another natural syrup)

For the apple cinnamon topping:

  • 1 Apple, chopped
  • 1 Tbsp Nuoi Foods almond butter
  • 2 tsp Agave nectar
  • 2 tsp Cinnamon
  • 1 tsp Natural vanilla extract

Method:

  1. Place the Almond milk, vanilla extract, cinnamon and agave nectar into a bowl and whisk together with a fork.
  2. Soak the bread in the mixture on both sides.
  3. Place carefully into a hot pan and cook on each side for around 1 1/2 minutes until golden & toasted. Repeat for each round of bread.
  4. For the apple cinnamon topping, place all of the ingredients into a small saucepan and heat for about 3 minutes until the apples are soft. Be careful not to burn the mixture. Take off the heat and leave to cool for 1 minute.
  5. Stack up your French toast and add your topping (we added some extra nut butter and yoghurt to of course).
  6. Tuck in!
