Thai Kale & Chilli Peanut Salad

We love a good salad and this recipe is definitely one of our favourites. It’s so good for you as well with at least 3 of your 5 a day! The Thai Chilli peanut dressing is amazing and can be used on anything – so you can make it up in bulk and have it as a salad & veg topper throughout the week.

It’s sometimes a struggle to find really good tofu, for this salad we used Tofoo Co Naked organic tofu, which tastes amazing!

Salad ingredients:

  • 2 Handfuls of kale
  • 6 Radishes, sliced
  • 1 Red onion, finely chopped
  • 2 Carrots, grated
  • Half a lime


For the fried tofu:

  • 1 packet of Naked Tofoo, chopped into squares
  • 1 tbsp sesame oil
  • 1/2 a Chilli, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp paprika
  • 1 tsp dried mixed herbs


Thai Chilli peanut dressing:

  • 1 Chilli, finely chopped (only if you want it extra hot, if you don’t like hot food, our Chilli Peanut butter will be quite enough!!)
  • 1 tbsp Nuoi Foods Chilli Peanut Butter
  • 1 Tbsp soy sauce
  • Pinch salt
  • Half lime, squeezed
  • 1 garlic clove, finely chopped
  • 2 tsp agave nectar
  • 2 tbsp hot water



  1. Put the kale into a large bowl and squeeze the lime juice over the leaves. Break the leaves down with your hands (kind of like a massage) for around two minutes
  2. Add your grated carrots, onion and radishes – mix together and set aside
  3. Then you will need to cook your tofu. Mix the Tofu, oil, chilli, garlic and seasoning together in a pan
  4. Put on the heat and fry until browned
  5. Set the tofu aside to cool
  6. For the peanut dressing, put all the ingredients into a bowl and whisk together with a fork until combined
  7. Add your tofu to the salad and top with your chilli peanut dressing
  8. Enjoy!
