This seriously is the stir fry of all stir frys…we don’t mess around! Bursting with flavour, this dish is a perfect one to serve up at a dinner party to impress your friends! This recipe serves 4, but can easily be doubled. Even better, if there is only two of you… then you’ve got it for lunch the next day!
Ingredients:
- 1 pineapple
- 6 vegan sausages (or any type of vegan protein, tofu works great too!)
- 1 red pepper
- 1 green pepper
- 6 spring onions
- 2 courgettes
- 8 mushrooms
- 1 tbsp Nuoi food Chilli Peanut butter
- 5 tbsp teriyaki sauce
- 6 tbsp soy sauce
- 1 medium piece of ginger
- 1 red chilli
- 2 garlic cloves
- 2 cups brown rice
Method:
- Put the brown rice on boil (this should take around 18-20 minutes)
- Cut up all of the vegetables into small slices
- Chop up the garlic and grate the ginger
- Fry the vegetables, chilli and garlic in a heated pan with some oil (around 6 minutes)
- Cut up the vegan meat (or tofu) and add to the pan, fry for a further 6 minutes on a very low heat
- Whilst this is frying, cut your pineapple through the middle and cut out the inside
- Chop up the pineapple and add to the stir fry with the ginger and spring onions
- Add the Chilli Peanut butter, teriyaki and soy sauce and mix together, then take off the heat
- For your pineapple bowls, dry out the inside with a piece of kitchen roll
- Drain the rice
- Place your rice and the stir fry into the pineapple
- Enjoy the tastiest stir fry ever!!!!!!!!!!!
