Roasted Vegetable, Chickpea and Chilli Peanut Buddha Bowl

We all love a good Buddha bowl recipe…and this one is quite tasty indeed! This bowl is packed full of nutrients, protein and goodness to give you that much needed health kick after a weekend of cheat meals! Made with Nuoi Foods Chilli Peanut butter.

This recipe serves two people.


  • 1 red onion
  • 1 yellow pepper
  • 1 red chilli, finely chopped
  • 1 handful of sugar snap peas
  • 1 courgette
  • 1 garlic clove, finely chopped
  • 1 can chickpeas, drained
  • 2-3 handfuls kale
  • 8 medium sized mushrooms (or 4 large)
  • 1 tbsp Nuoi Foods Chilli Peanut butter
  • Pumpkin seeds (to sprinkle on top)


  • 4 tsp paprika
  • 4 tsp chilli powder
  • 3 tsp pepper
  • 1 tsp salt
  • 2 tsp cumin
  • 3 tbsp olive oil

You can also optionally add rice to this dish!


  1. Pre heat the oven to 200 degrees fan
  2. Line 2 baking trays with greaseproof paper
  3. Prepare your vegetables ready to be roasted
  4. Put the vegetables and chickpeas onto different baking trays to roast
  5. Mix the spices into the olive oil in a small pot and pour over the vegetables and chickpeas
  6. Roast the vegetables and chickpeas in the oven for around 25-30 minutes
  7. Prepare your kale by breaking down the leaves, to do this you need to massage with your hands in olive oil (or water for a lower fat option) and then place in the bowl
  8. Take out your roasted veg and chickpeas and leave to cool for about 5 minutes. Then add them to your buddha bowl
  9. Top the bowl with a big spoonful of Nuoi Foods Chilli Peanut butter and sprinkle the top with a handful of pumpkin seeds
  10. Take a cool Instagram photo, tag us, let us know what you think,  and then eat your seriously tasty buddha bowl! Enjoy xxxxxxx
