Chilli Peanut and Mushroom Stuffed Peppers

Spice up your stuffed peppers with a kick of Nuoi Foods Chilli Peanut nut butter! This delicious vegan dinner recipe is packed with goodness and tastes fantastic; so if you enjoy a stuffed pepper, you definitely have to give this one a try!

Ingredients:

  • 2 tbsp Nuoi Foods Chilli Peanut nut butter
  • 2 Peppers
  • Wholegrain Rice
  • 1 Red Onion
  • 4 Large Mushrooms
  • 1 Garlic Clove
  • Spinach
  • Paprika
  • Mixed Herbs
  • 1 tbsp Tomato Puree

Method:

  • Preheat the oven to 200C
  • Cook the rice
  • Chop the mushrooms, garlic and onion
  • Mix the cooked rice in a bowl with the other ingredients
  • Cut the tops off the peppers and stuff them with the rice mixture
  • Place tops back on the peppers and cook in the oven for 25 minutes
  • Take out of the oven and leave to stand for a couple of minutes

Don’t be afraid to drizzle with extra Chilli Peanut nut butter and sprinkle with black pepper! Enjoy!
