Spice up your stuffed peppers with a kick of Nuoi Foods Chilli Peanut nut butter! This delicious vegan dinner recipe is packed with goodness and tastes fantastic; so if you enjoy a stuffed pepper, you definitely have to give this one a try!
Ingredients:
- 2 tbsp Nuoi Foods Chilli Peanut nut butter
- 2 Peppers
- Wholegrain Rice
- 1 Red Onion
- 4 Large Mushrooms
- 1 Garlic Clove
- Spinach
- Paprika
- Mixed Herbs
- 1 tbsp Tomato Puree
Method:
- Preheat the oven to 200C
- Cook the rice
- Chop the mushrooms, garlic and onion
- Mix the cooked rice in a bowl with the other ingredients
- Cut the tops off the peppers and stuff them with the rice mixture
- Place tops back on the peppers and cook in the oven for 25 minutes
- Take out of the oven and leave to stand for a couple of minutes
Don’t be afraid to drizzle with extra Chilli Peanut nut butter and sprinkle with black pepper! Enjoy!
