Maple Pecan Protein Cookies (vegan, gluten free, no refined sugars)

We are celebrating National Cookie Day with these delightful Maple Pecan Cookies, with all of the indulgence but none of the guilt! These tasty treats are gluten free, refined sugar free and vegan too, they are great for breakfast, snacking or desserts… so what are you waiting for, get baking!!

Ingredients:

  • 1 cup gluten free oats
  • 1/2 cup coconut flour (or almond flour)
  • 1 tbsp Nuoi Foods Pecan Pie nut butter
  • 1/2 pecans, roughly chopped
  • 1/2 cup maple syrup
  • 1 tbsp hemp protein powder
  • 1 tbsp ground flax seed
  • 1 tsp baking powder
  • 1/2 cup almond milk

Method:

  1. Pre heat the oven to 200 degrees fan
  2. Mix together the oats, coconut flour, hemp protein, flax seed and baking powder
  3. Then add the Pecan Pie nut butter, maple syrup, almond milk and pecans
  4. Mix thoroughly until combined
  5. Roll the mixture into small balls and flatten slightly onto a greaseproof lined baking tray. Add a pecan nut on top of each one for decoration
  6. Bake the cookies in the oven for 8 minutes, until golden on top
  7. Leave the cookies to cool for around 5 minutes
  8. We drizzled ours with extra Nuoi Foods Pecan Pie nut butter before tucking in! Enjoy!
