Banoffee Protein Pancakes (vegan, gluten free, healthy, no refined sugar)

Banoffee Protein pancakes

These yummy pancakes are serious breakfast goals….. they’re the perfect post workout snack and we cannot get enough of this recipe!!! So get into the spirit of Veganuary and make this delicious treat for all of your family and friends!

This recipe serves 2.

Ingredients:

Pancakes:

  • 2 bananas
  • 1 tbsp ground flax seed
  • 1 tbsp gluten free flour
  • 1 scoop protein powder (we used hemp protein powder)
  • 1 tsp vanilla extract
  • 2 tsp Nuoi Foods Pecan Pie nut butter
  • 1 tsp baking powder
  • 1 cup (around 235ml) Almond milk

Toffee date sauce:

  • 1 cup of dates
  • 1 cup Coconut milk
  • pinch of salt
  • 1 tsp vanilla extract
  • 4 tbsp boiling water

Method:

  1. Add everything into your blender and whizz it allllllllll up
  2. It will turn into a thick, but pourable, batter, if it’s a little too thick add a little extra almond milk (1 or 2 tbsp)
  3. Pre heat some oil in a frying pan and then turn down to a low heat
  4. Pour the batter into the pan, pancakes no bigger than the size of a CD are easiest to flip!
  5. Fry on each side for around one minute until golden and repeat until all of the mixture is gone
  6. Stack up your master piece and get ready to make the toffee sauce!
  7. Add the dates and the boiling water to a saucepan over a medium heat
  8. Stir whilst the water disappears and the dates turn into a thick paste
  9. Then stir in the coconut milk, salt and vanilla
  10. Take the mixture off the heat and pour it into your blender
  11. Blend until the sauce is smooth and creamy
  12. Pour it onto your pancakes for the tasty topping! We also added banana and cacao nibs for extra yums… enjoy xxxxx
