Cinnamon & Raisin Peanut butter cookies (vegan, gluten free)

Who loves peanut butter? Who loves cookies? We certainly do, which is why we’ve made this tasty recipe! These cookies are pure melt in your mouth, peanut-y deliciousness and we can’t wait for you guys to try this one out!

Makes 8 cookies


  • 2 flax eggs (1 heaped tbsp ground flax seed to 4 tbsp water for one egg)
  • 2 cups gluten free flour
  • 1 tsp baking powder
  • 1 cup dark agave nectar
  • 2 tbsp Nuoi Foods Cinnamon & Raisin peanut butter
  • 1 tsp vanilla
  • Pinch sea salt


  1. Pre heat oven to 180 degrees fan
  2. Line a baking tray with greaseproof paper
  3. Mix together the flax eggs, peanut butter, vanilla, salt and agave nectar in a bowl
  4. Then sieve in the flour and baking powder
  5. Stir with a wooden spoon until combined
  6. Using two teaspoons, put the mixture onto the baking tray in small sized balls and then flatten down slightly
  7. Cook in the oven for around 8 minutes until slightly golden on the edges
  8. Leave to cool for around 5 minutes before tucking in! Seriously though, be careful…we ate them all in a day… no regrets.
