Happy Pancake Day everyone! Why not try out this delicious savoury pancake recipe? You can top it with anything, if you wanted a bigger meal it can be topped with refried beans or stir fry! These pancakes tasted amazing, perfect for any day of the year.
Serves 2:
Ingredients:
- 2 sweet potatoes (boiled and mashed)
- 1 tbsp Nuoi Foods Chilli Peanut butter
- 1/2 cup gluten free plain flour (or any flour such as oat flour etc)
- 2 flax eggs (1 tbsp ground flax seed to 4 tbsp water for 1 egg)
- 2 garlic cloves
- Salt
- Pepper
- 2 tsp paprika
- 1 handful of fresh herbs (we used coriander)
- 2 tbsp olive oil (plus extra for frying)
Method:
- Make your flax eggs and leave to sit for around 5-10 minutes
- Then whizz up all of the ingredients in a blender, or you can manually whisk/stir together
- Heat a frying pan with 2 tbsp olive oil
- Spoon the thick batter into the pan in small round discs
- Fry on a low heat for 2 minutes on each side until golden, then repeat
- Stack up your pancakes and add your topping! We added sautéed spinach and extra peanut butter which was delicious! Enjoy xx
