Blueberry protein pancakes

These pancakes are exactly what you need to cook for family & friends when there’s a snow day! Paired with a warm cup of cocoa, snuggled up watching the snow outside…. We couldn’t think of anything better!

Ingredients:

  • 1/2 cup gluten free flour
  • 1/2 cup oats
  • Big handful blueberries (microwaved so they burst)
  • 1 flax egg ( 1 tbsp ground flax seed to 3 tbsp water)
  • 3/4 cup almond milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp Agave nectar
  • 1 tbsp vegan protein powder (we used hemp protein)

Toppings:

  • Nuoi foods Pecan Pie nut butter
  • Blueberries

Makes around 8 small pancakes

Method:

  1. Put the handful of blueberries into a microwavable bowl and microwave for around 40 seconds until they have all burst
  2. Put all of the pancake ingredients into a blender and mix together until you have a thick batter
  3. Heat some oil in a frying pan on a low heat
  4. Once the oil is heated, pour your batter into small disc sizes and fry on each side for around 1 minute
  5. Stack up your pancakes and add some tasty toppings, we added Nuoi Foods Pecan Pie nut butter, and more blueberries!
