Tofu Scramble & Chilli Peanut crumpets


Want to try something a little bit different to the usual brunch recipes? These Chilli Peanut and tofu scramble crumpets taste AMAZING! And they’ll be sure to SPICE up your breakfast 😉

Serves 2.


  • 4 crumpets, toasted
  • Nuoi Foods Chilli Peanut butter
  • 1 pack silken tofu (or normal tofu mashed/crumbled up)
  • 6 large mushrooms, chopped
  • 1 garlic clove, chopped
  • 8 cherry tomatoes, cut in half
  • 2 handfuls spinach
  • 2 tsp turmeric
  • salt and pepper to taste


  1. Put the crumpets in the toaster
  2. Heat some oil in a frying pan and fry the garlic, mushroom and tomato on a medium heat for around 6-8minutes
  3. Add the tofu, turmeric, salt and pepper
  4. Fry for a further 2-3 minutes
  5. Add the spinach and fry until it has all shrunk
  6. Take of the heat
  7. Spread your Nuoi Foods Chilli Peanut butter on the crumpets
  8. Top with your tofu scramble mixture


We seasoned ours with extra pepper on top! Enjoy!!!
