Chocolate chip Banana Protein Pancake Stack

Sunday pancake goals….you have to try this delicious recipe! Perfect for any day of the week, this quick and easy recipe will be a favourite at the breakfast table.

Serves 2 people

Ingredients:

  • 1 1/2 ripe bananas
  • 1 tbsp vegan protein powder (we used pea protein)
  • 1/3 cup wholemeal flour
  • 1 cup rolled oats
  • 1 cup dairy free milk (we used almond milk)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup chocolate chips

Method:

  1. Put it all into the blender or a bowl and hand blend and you have a thick batter
  2. Mix in some chocolate chips
  3. Heat some oil in a non stick pan and turn to a low heat
  4. Pour the batter into small sized discs
  5. Cook each side for around 2 minutes until slightly golden
  6. Stack up pancakes
  7. Top with lots of delicious Nuoi Foods nut butter, we used Hazelnut Cocoa
  8. Sprinkle with extra chocolate chips, strawberries and banana
